Stuffed Zucchini

Dennis and I made these stuffed zucchinis and paremsan baked tomatos the other night. They were delish... parmesan baked tomatoes recipe to come soon...

STUFFED ZUCCHINI
(adapted from Kayotickitchen)



1 tbsp light sour cream
1/2 tsp sea salt
1/4 tsp curry powder (if you do not like curry, skip this step as the flavor is strong)
1/2 tomato, finely chopped
1/4 cup chopped mushroom
1 tsp thyme
3 strips crispy bacon finely chopped (leave this part if going for vegeterian side)
1 tsp fresh basil
2 zucchinis sliced lengthwise
1 small onion, chopped
1/4 cup mozzarella cheese
1/4 tsp pepper

Preheat oven to 400 degrees.
Start slicing the zucchini lengthwise and spoon out the insides (creating a canoe type shape) and place in medium bowl. Place zucchini boats in baking dish.

Saute the onion and mushroom in small amount olive oil on the stove top. Add in the curry powder and heat for about 30 secondes.  Transfer to bowl with zucchini pulp.
Then add basil, thyme, tomato, bacon, sour cream, salt and pepper to bowl. Mix well.

Next spoon the mixture into the zucchini boats. Top with mozzarella cheese. Bake 20 minutes until cheese melted and golden brown.
