Book club menu

I love, love our book club...we meet every month....every other month we read a book and the month in between is "social night" i.e. drink wine and eat night....that was my night to host last night the eat and drink night:) It was so nice....thought I would share my menu and recipes for the night....enjoy!!



My favorite go-to salad....strawberries, feta, slivered or candied almonds, and spring mix lettuce...served with raspberry or strawberry vinaigrette 

The easiest appetizer....cream cheese block covered with this blueberry chipotle sauce...incred...

Loved this quick easy recipe...I just cut up turkey sausage, then mozzarella, and a variety of olives


My new fave go to sangria...
750 mL white wine (I use Sauvignon blanc)
1/2 cup white rum
2 cups lemon/lime soda (I use Sprite Zero)
Strawberry and apple
(I love the flavor strawberry and apple add but you can use what you prefer)

And of course the main course...Zucchini Lasagna....perfect for those gluten free and can be made Paleo with vegan cheese or omit the cheese:)

2lbs ground beef or turkey
1-8oz can tomato puree
1 lg can petite diced tomatoes
1 med onion
sprinkle garlic salt
2 tbsp olive oil
2 tsp salt
1 tsp black pepper
1 1/2 tsp oregano
1 tsp sweet basil
10 oz mozzarella cheese
3 large zucchini

  • Brown onion in olive oil on stove top on medium hear. Add in ground beef and brown. Add tomatoes, tomato puree, oregano, basil, salt, pepper & garlic salt
  • Simmer covered 2 hours (I honestly love to throw this in the crock pot the morning of and let stay on warm all day, helps all the spices to mix well
  • Cover bottom of 13x9 dish with layer of sauce, then cover with mozzarella and layer zucchini, repeat layers then top with 1 cup parmesan/mozzarella cheese mix
  • Bake at 350 degrees for 45 minutes
For dessert I made these delish Smores bars.....totally forgot to take a pic but they definitely rounded out the meal...a meal to me isn't complete without dessert:)
