Two Healthy Salads

Dennis and I have recently fallen in love with these two delicious, easy, healthy salads

Cucumber and Tomato salad

10 small cherry or Roma tomatoes cubed
2 organic cucumbers cubed
1/4 cup crumbled fat free feta cheese
2 tbsp red wine vinegar
Salt and pepper to taste

Toss all above ingredients into a large bowl and enjoy!


Avocado/Kale salad   

1 avocado (mashed)
3 cups chopped Kale
1 lemon
Dash of salt to taste

Mix avocado and kale in large bowl. Squeeze 1 fresh lemon
 over salad and add salt to taste!

This salad is surprisingly delicious and kale is SO good for you!


They even go great paired together! (I apologize for the iPhone quality pictures,
I should start grabbing my good camera)
