12 Easy Crock Pot Meals


A couple weeks before baby Cayson arrived my BFF Jaimee, who blogs here, and I decided to do another crock pot session....it has come in so handy already....we have enjoyed at least 3 of these over the last 3 weeks. I cannot recommend having a good set of crock pot meals in your freezer to easily pull out and throw in when you are cramped for time or just in need of a quick dinner meal. I can't say enough about how nice it is to come home from work to dinner ready and not have to stress about cooking:) I cannot take credit for any of this organization as Jaimee did all the leg work...I just helped narrow down our choices and enjoyed our time throwing these together while our hubbies entertained our sweet toddlers!! There is a #13 bonus Paleo meat loaf recipe at the end....I highly recommend it. It was the first meal we enjoyed and it was delish! It isn't a crock pot meal but it is a freezer to oven simple meal!! Hope you enjoy!


Thai Chicken Wings with Peanut Sauce

Ingredients:
2 lbs. chicken drumsticks or wings 1/2 cup bottled salsa
1/4 cup Peanut Butter
3 T lime juice
3 T soy sauce
3 T water
2 T freshed chopped ginger
1/4 cup sugar
2 cloves garlic chopped


Directions: Place all ingredients in bag and freeze until ready to cook.

Write on bag:
1. Thaw slightly and place in slow cooker. 2. Cook on low for 6-8 hours.


Crockpot Italian Sausage with Peppers & Onions

Ingredients:
1lb. Italian Sausage Links 1 large green pepper
1 medium onion
2 cups diced tomatoes 2t. onion powder
2t. garlic powder


Directions:
Mix all ingredients in freezer bag and freeze.


Write on bag:
1. When ready to cook, place all ingredients in a crock pot and cook on low for

6 hours or high for 4 hours.
2. Can serve on warm hot dog buns!


Honey Sesame Chicken

Ingredients:
1 lb chicken tenders
3 T olive oil
1 cup honey
2 T sesame seeds
1/2 cup soy sauce
1 tablespoon sesame oil 1 t. salt
1 t. pepper


Directions:
Place all ingredients in freezer bag, toss to coat and freeze.


Write on bag:
1. When ready, place in crockpot and cook on low for 4-5 hours. 2. Remove chicken & shred, and then return to sauce.
3. Can serve over hot cooked rice.


Teriyaki Chicken

Ingredients:
1 lg bag of carrots
1 red onion cut in chunks
2 lg cans of pineapple (undrained) 4 garlic cloves
4 chicken breasts
1 cup teriyaki sauce


Directions:
Mix all items together. Split between 2 bags, lay flat and freeze


Write on bag: 1/4 cup teriyaki sauce
1. When ready to serve add 1⁄4 cup teriyaki sauce to crock pot. 2. Cook on low 8 hours-can serve over rice

Crock Pot Beef Stew

Ingredients:
1 large onion, diced
1
1⁄2 lb lean stew meat, cut in 1 inch chunks 2 cups water
2 tsp beef bouillon or 2 cups beef stock
1
1⁄2 cups V-8 juice
1⁄3 cup Country Bob’s All Purpose Sauce 3 clove of garlic
1 lb carrots cut up
Salt & Pepper to taste
Optional- bunch of celery


Directions:
Add onion, meat, water, beef bouillon, V-8 juice, Country Bob’s sauce, and garlic clove into your freezer bag.


Write on the bag: 4 medium potatoes (cut in 1 inch cubes-omit for Paleo)
1. Dump contents of the freezer bag into your crock pot.
2.Add 4 medium potatoes, cubed.
3.Cook on high 6-7 hours or low for 8-9 hours.


Low Fat Mexican Fiesta Chicken Ingredients

Ingredients:
4-5 Chicken Breasts
1 Package McCormick Mexican Fiesta 2 tablespoons Extra Virgin Olive Oil
2 tablespoons Apple Cider Vinegar 1/4 cup Water
1 Can Diced Tomatoes no salt added 1 Cup Frozen Corn
1 Can Black Beans rinsed and drained


Directions:
Place chicken in freezer bag, mix the McCormick Packet in a bowl with oil, vinegar

and water, pour over chicken. Add in tomatoes, corn, and beans. 

Write on bag: 1 Cup Minute Rice or Barley
1. Cook on LOW for about 4-5 hours or until chicken can easily be cut in half or shredded.
2. Remove chicken and add rice or barley into slow cooker and stir, then add chicken and stir again, cook for an additional 20-45 minutes longer on LOW. The rice will need to cook about 45 minutes and the Barley only 20-30 minutes 
3. Add additional water if needed with the rice or barley. Serve with shredded 2% cheddar cheese on top. 

Spinach and Salsa Chicken

Ingredients:
3-4 boneless skinless chicken breast
2 cups of salsa (we like to use the fresh kind that is more like a Pico de Gallo) Frozen bag of spinach (I usually use 1/2 the bag, but you could use more or less)
1 to 2 tablespoons of Mrs. Dash Garlic and Herb seasoning


Directions: Place all items in freezer bag, you can add or wait for the spinach

Write on bag:
1. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4.
2. Shred the chicken and mix together with the spinach.
3. Serve on whole-wheat tortillas, over rice, or even over a salad for a healthy

meal!

Crock Pot SW Flank Steak

Ingredients:
1-1/2 lbs. flank steak
1 onion, chopped
3 cloves garlic, minced
16 oz. jar chunky salsa
1/2 tsp. dried oregano leaves
2 tsp. chili powder
1/2 tsp. salt
1/4 tsp. pepper
15 oz. can black beans, drained and rinsed 1 red bell pepper, sliced
1 yellow bell pepper, sliced
3 cups hot cooked rice


Directions: 
Trim excess fat from steak. Place onions and garlic in bottom of freezer bag and top with steak. Mix salsa, oregano, chili powder, salt, and pepper in small bowl and pour over meat. Top with drained black beans.

Write on bag:
1. Cook on low for 7-9 hours until meat is tender
2. Remove meat from slow cooker and slice into thin strips against the grain. 3. Turn heat to high and return beef to slow cooker until ready to serve
4. Can serve over rice


Apple Cherry Pork Loin

Ingredients:
2 pounds boneless pork loin 
1 cup fresh cherries, pitted 
1 cup apples, diced 
0.75 cup apple juice 
0.5 cup water 
0.5 cup onion, diced 
0.5 cup celery, diced 
salt and pepper, to taste 

Directions: 
Add remaining ingredients and mix all ingredients in gallon size freezer bags. 

Write on bag:

1. Cook on high for 4 hours or until pork is cooked through.

Slow Cooker BBQ Cranberry Chicken

Ingredients:
2 lbs chicken breasts
1/4 cup dried minced onion
1 (16 oz) can whole cranberry sauce 1 cup barbecue sauce


Directions:
Combine all ingredients in a resealable gallon-sized freezer bag and zip
closed. When ready to eat, remove from freezer and thaw in fridge for 24 hours. 


Write on bag:
Cook on HIGH for 3-4 hours or LOW for 6-7 hours.

Ranch Pork Chops

Ingredients


2 Cans Cream of Chicken soup 
4-6 Pork Chops 
1 packet Ranch

Directions
Combine all of the ingredients in freezer bag

Write on bag:
Place in the crock pot and cook on high for 4 hours or low for 6-7 hours.
Enjoy! 
Chinese Beef and Broccoli 

Ingredients
2 lb beef, thinly sliced (flank steak is ideal, but any cut will work) 
1 can beef broth or consomme 
1/2 cup soy sauce 
1/3 cup brown sugar 
1 tablespoon minced garlic 
1 tablespoon sesame oil 
2 tablespoons cornstarch 
1 bag frozen broccoli florets (store seperately)
2 cups white or brown rice 

Directions:
Put the sliced beef in the bottom of freezer bag.  Mix together the broth, soy sauce, brown sugar, garlic and sesame oil. Pour over the beef. Keep frozen broccoli seperate.

Write on bag:
Place bag and bag of broccoli into crock pot. Cook on low 5-6 hours. 

BONUS RECIPE:

Paleo Meatloaf 

Ingredients

1 onion
1tsp kosher salt
1tsp pepper
1tsp thyme
1tsp garlic powder
1Tbs tomato paste
1/2 cup chicken stock
1Tbs Worcestershire
2 large eggs
2lbs ground turkey(I used regular ground beef) 1 cup ketchup


Directions:
Stir together paste, Stock, Worc sauce, onion and all spices.
In large bowl crack eggs over meat and then fold in onion mix. Place into foil pan. No greasing pan required. Top with ketchup. Cover with foil

Write on foil:
Bake 325 for 90 minutes. (You can place this frozen in oven-takes approx 90 minutes when frozen)

1 1⁄2 lb flank steak + 2 lb flank steak 2 lbs. boneless pork loin

1⁄2 c. chicken stock
3 diced tomatoes
2 lg. cans of pinapple
3 c. beef stock
1 corn (or 1 cup frozen) 2 black bean
1 whole cranberry sauce 2 cream of chicken
