Beef stew

I've been craving stew for the last several weeks and I finally made it happen last night! This is my dad's infamous recipe! It is SO good. Enjoy!




Ingredients 
1.5 lbs stew meat (eye of round is our favorite cut)

1 can beef broth
1 can rotel
1 lg can diced tomatoes
1 can sliced carrots
1 can sweet peas
1 can greens beans
1 can corn
2 small peeled, cooked potatoes diced (you can buy canned)

Brown stew meat over cook top. Place browned stew meat along with can of beef broth and rotel in crock pot on high for 1 hour. Add additional vegetables and cook 4 hours on high. Serve warm. Enjoy!
