No bake protein bites


With our long line of family history of breast and now ovarian cancer we have been told to avoid all things soy...I avoid it like the plaque these days...I swear all granola bars and protein bars contain soy so we were on a quest to find some sort of protein/breakfast bars that don't contain soy and we stumbled upon these delicious things...no additives, no soy....so easy, so delicious, even Isabella will devour them....you must try them...

No Bake Protein Bites

1 cup dry oats (not quick oats)
1/2 cup peanut butter (or almond butter)
1/2 cup flaxseed
1/2 cup dark chocolate chips
2/3 cup toasted coconut flakes
1/3 cup honey
1 tbsp chia seeds
1 tsp vanilla extract

Mix all the above ingredients in a medium bowl. Place in refrigerator for an hour (if in a hurry I place mine in the freezer for approx 20 min). Remove from fridge and roll into balls. You can also put into 8x8 cooking pan to make bars if you prefer. (Makes about 20 medium bites) 

You can subsititute almond butter for the peanut butter..it definitely changes the taste and texture but still yummy...you can also play with the dark chocolate chips and use butterscotch chips/chocolate chips whatever your little heart desires...enjoy!!!

I had a friend bring me lactation cookies recently and I will be trying my hand at them soon...they are healthy, delicious and soy free too:)
