Book club nights are some of my favorite nights. Some sweet friends, good food, wine, and good convos....perfect combo!! My heart always leaves SO full (same with my girl's Pokeno nights)! I had originally planned to make something different but my sweet friend made Stir fry for Pokeno night and I was sold. I used this recipe from Danielle Walker. Delish!! I adapted a few of her recipes and it turned out great. The appetizers were huge hits as well! We hit the pool last night for social night. Some of the books I am absolutely loving lately are....Where the Crawdads sing, My Oxford Year, Island Girls, The Tattooist of Auschwitz, Educated, The Last Mrs Parrish, The Woman in Cabin 10 and on and on:) Currently reading Nine Perfect Strangers and loving it.
SO easy....peaches, mozzarella, basil layered and sprinkled with aged balsamic vinegar
This cheese appetizer has become a favorite...SO good.
I adapted it from afortstale.com
8 oz cream cheese block
8 oz mozzarella cheese block
8 oz aged white cheddar (or Monterrey Jack cheese)
Sauce:
1/2 cup white wine vinegar
1/2 cup olive oil
2 tsp chopped basil (I love basil and add extra)
1/2 tsp red pepper flakes
Mixed olives (I used Kalamata/stuffed green olives)
Cut cheese into 1/4 inch slices and alternate. Drizzle sauce over top. I let mine sit and marinade for 2 hours! This is even delicious left over!!
